It would certainly make for a better public image to have such a clean and consistently-applied rule.

Most Western laws dictate hiring practices in that race, sex nor religion should not influence hiring.

As far as how one displays their individuality, many times that is up to the company. Some companies allow for much individuality, some do not condone it. For example, some companies don't allow for individuals to decorate their cubicle. To allow persons to display their religions on an airline where the attendants are representative of the company would be to almost promote religion. That is not the business of an airline (I would add especially since airlines are the target of many fundamentalist jihadists).

I live in mortal fear of seeing crucifixes: I fear one might convert me, quite unwittingly!

Come come now. It's simply a mark of individuality, like earrings, except it's evidence of something decidedly less vacuous than "I like dangly things hanging on my ear lobes wheeeee!!"

I disagree with Christianity, Judaism, Islam, and so on, but I wouldn't mind if their adherents worked at my company and adopted attire that wasn't patently offensive to the majority of people. A crucifix is not a mind-control device, and employees shouldn't be slavish perfectly-conforming representatives of the company, in my opinion. A company worked by individuals who are comfortable in their own and others' diversity is far more likely to get my business. How about yours?

I can't hear the topic of cross wearing without thinking of the George Carlin routine in which he wonders, "if Jesus had died in another fashion, would christians be wearing little electric chairs around their necks?"
I hope my boss doesn't mind my new necklace that says, "I Love Satan!" Hey, it's just a little religious jewelry.

I think Bill Hick's joke is a better spin off.

"A lot of Christians wear crosses around their necks. Do you think when Jesus comes back, he's really going to want to see a fucking cross? Ow! Maybe that's why he hasn't shown up yet...it's like going up to Jackie Onassis wearing a sniper rifle pendant... Just thinking of John, Jackie. We love him. Trying to keep that memory alive, baby. [mimes shooting a rifle] I did that routine in Fyffe, Alabama, and after the show these three rednecks came up to me. 'Hey, buddy! C'mere! Hey Mr. Comedian! C'mere! Hey buddy, we're Christians and we don't like what you said!' I said 'Well, then forgive me.' Later, as I was hanging from the tree..."

Why wasn't something like an olive branch chosen for the symbol of Christianity, or the fish symbol?

Well a lot of folks do use the fish symbol -- like on bumpers? It doesn't endear them anymore to people, though. Even the fish or the symbol of a dove are Christian symbols and I would imagine evoke the same feelings if one does not have an affinity to Christianity.

The cross was the initial symbol of Christianity because the cross is supposed to be the ultimate price that Jesus paid for the sins of all.

I personally think that Jesus' life was a greater price but so many people ignore the life part.

Altruism and sacrifice go hand in hand.
